Which specification of Galvanized sheet is suitable for making the jet blast deflector ?

Sir:
Your question is difficult. If the jet engine exhaust has a temperature in excess of about 430 C. I suspect hot dip galvanized steel may not be the best choice for your application. Likely an alloy (special stainless steel) that even an acetylene torch cannot cut may be a better choice.
Haynes International 556 comes to mind.
