Discoloration of stainless steel
We have gas fired kitchen ovens that are fabricated from SS 304 & SS 430 that are discoloring rapidly inside - should the SS be passivated?

You should always passivate the steel if you expect good corrosion resistance. However, even passivated it will usually discolor in high heat conditions in an oven. Removing iron from the surface by passivation will help to prevent the discoloration. Of course, if you are getting fumes from the burning gas on the surface you will certainly get discoloration.
