I am beginner in electropolishing; what type of acid is required for stainless steel etching.

Sulfuric acid and phosphoric acid are most common. Most "must-have" plating books have a chapter on this, including the Metal Finishing Guidebook, the Electroplating Engineering Handbook ⇦ this on eBay, AbeBooks, or Amazon [affil links] , and ASM's Metals Handbook Volume 5. Good luck
