Which is better: 12C27 or 440 Stainless Steel Carving Set?
I am looking at carving sets to give my husband as a Christmas gift. Most of the knives are made with 12C27 stainless steel yet there's one set made with 440 stainless steel. This is the least expensive set (olive wood handles.) I have never heard of 12C27 s/s. Is it of higher quality than 440? I looked up 440 and it seems high quality, but I couldn't find anything about 12C27. I came upon this site during my Web research.

Check out this link: http://www.agrussell.com/steel/ Note that the two steels you mention are very similar.
