What is in citrus fruits, and how does it affect pH of saliva?

i can't find anywhere the composition of citric fruits namely orange, grapefruit, lemon and lime. I need to know what is in them and all that jazz for my introduction on the pH saliva after of the above fruits juices are consumed. this is the first time ever I've had to write introductions to my experiments and apparently we have to have absolutely everything in it... which is a problem when I can find absolutely nothing!

I got in trouble for my draft because all I did was stuff on saliva and citric acid on eBay or Amazon [affil link] .
